Sabio Coffee are a vertically integrated coffee operation that produces, processes and exports specialty coffee directly from their farms in Nicaragua to the rest of the world. 

With a focus on research, innovation and sustainable farming practices, Sabio partners with smaller producers in order to provide them with an opportunity to enter the international market and sell their coffees at better prices. 

Grown on the 141ha Finca Aurora in Jinotega, Nicaragua and harvested between December and March, this coffee provides jobs for local communities including La Fundadora, El Arenal, Aranjuez & Laguna Verde.

Fresh cherries are left to repose in bags for 36 hours then put on raised beds. The cherries are dried for 25 days and reposed for 11 weeks before hulling.

Expect delicate acidity and a velvety body, with tasting notes of red wine gum, strawberry and mandarin.
