Railaco coffees benefit from the region's rich volcanic soil and an ideal microclimate. The coffee harvest in Ermera typically takes place between June-September, with farmers handpicking only ripe cherries, which are then delivered to Timor Global before the coffee is rigorously evaluated to ensure quality and suitability for natural processing.


Freshly harvested cherries are dried on raised beds or patios, where they are carefully turned to ensure even drying & to prevent over fermentation. Given the challenges surrounding transportation & infrastructure in Timor-Leste, maintaining strict drying protocols is crucial to achieving final cup quality.

Timor Global has played a pivotal role in introducing smallholders to better farming practices, providing key training in harvesting techniques, investing in processing infrastructure, & promoting intercropping to support farmers in diversifying their income while enhancing soil health.
